Chamomile Bärbucha Kombucha

Chamomile (Kamille - Deutsch) was our first herbal Kombucha that we have created over two years ago. Back then the reason was was simple. We wanted to offer something healthy, without any Caffeine & with ingredients that are relatively well known.

And it was a love at first sight, or rather a first sip

The recipe is very simple. Besides our Kombucha Scoby, sugar & a starter liquid, it requires only one very beneficial ingredient - a well know & popular herb, you guest it, Chamomile.

When we make a non Camellia sinensis Kombucha, we always pick a botanical that is traditionally consumed as a "tea". This is one of the conditions. The second condition - it has to taste good. And we love Camomile tea.

Chamomile has been know for centuries for its benefits. When you look online you will find many articles about those benefits. Below is just one of them (1*)

Making this particular Kombucha is also quite easy. We start with Chamomile flowers & water:

Just like you would make the Chamomile tea.

When the flowers steep for about half an hour, we strain them & we add our Organic unrefined brown sugar. When that cools down we pour that herbal mixture into our glass fermenter.

We use glass only for all of our Kombucha. Next, we add some starter liquid & one of our happy & vital Scobies.

So now the fun begins. When the first fermentation is finished, our Kombucha is ready. The Scoby has a new growth & there are plenty of white, natural bubbles.

All those are signs of a healthy fermentation.

When the fermentation time is over, we bottle our Kombucha into our glass bottles

And then it's time for the so called second fermentation (2F), during which natural carbonation develops inside to bottles. This is something that we are very proud of. All natural, nothing artificial!
