Elderflower Jun

Aktualisiert: 22. Dez 2019

This particular, magical time of the year (end of May) calls for yet another one of our seasonal brews. This time Elderflowers take the spotlight in our cold-brewed Elderflower (Holunder) Jun Bärbucha.

Jun is a cousin of Kombucha. It is veiled in mystery, supposedly originating in Tibet. But my personal conviction is that originally Kombucha was made with honey, as honey was used by humans way before sugar was created. But I will write more about it when I will be describing our Jun Bärbucha Kombucha. To be short at this time - Jun is traditionally made with honey & green tea. It requires a different type of culture & the fermentation time is much faster than Kombucha. It requires only about 3 days, as honey is a simpler form of sugar & it gets broken down faster.

We start with freshly picked Elderflowers from the outskirts of Berlin. When we have enough

We pick through them & then we gently rinse them. Next, they go into our fermentation glass jars

And it's time for local, raw honey

Next comes cold, filtered & revitalized water, Jun cultures & Jun starter liquid.

From this point, it takes three days for our Elderflower Jun Bärbucha to get ready. During this time the color changes & our Jun becomes quite bubbly.

Then it's bottling time!

So why we make it? The first reason - It's delicious. The second reason - it is made with local ingredients. The third reason - Elderflowers have quite a few health properties.

Let's take a look at those properties. First, from EatHealthyLiveFit.com (1*)

WebMD lists this for Elderflowers (2*)

“Elderflower is the flower of a tree. An extract of the flower is used to make medicine. Elderflower is used for swollen sinuses (sinusitis), colds, influenza (flu), swine flu, bronchitis, diabetes, and constipation. It is also used to increase urine production (as a diuretic), to increase sweating (as a diaphoretic), and to stop bleeding. Elderflower is also used as a gargle and mouthwash for coughs, colds, hoarseness (laryngitis), flu, and shortness of breath. It is used on the skin for joint pain (rheumatism), and pain and swelling (inflammation).”

For those that use German, we include this article (3*)
