Elderflower Jun Bärbucha

This particular, magical time of the year (end of May) calls for yet another one of our seasonal brews. This time Elderflowers take the spotlight in our cold-brewed Elderflower (Holunder) Jun Bärbucha.
Jun is a cousin of Kombucha. It is veiled in mystery, supposedly originating in Tibet. But my personal conviction is that originally Kombucha was made with honey, as honey was used by humans way before sugar was created. But I will write more about it when I will be describing our Jun Bärbucha Kombucha. To be short at this time - Jun is traditionally made with honey & green tea. It requires a different type of culture & the fermentation time is much faster than Kombucha. It requires only about 3 days, as honey is a simpler form of sugar & it gets broken down faster.
We start with freshly picked Elderflowers from the outskirts of Berlin.
We pick through them & then we gently rinse them. Next, they go into our fermentation glass jars
And it's time for local, raw honey
Next comes cold, filtered & revitalized water, Jun cultures & Jun starter liquid.
From this point, it takes three days for our Elderflower Jun Bärbucha to get ready. During this time the color changes & our Jun becomes quite bubbly.
Then it's bottling time!
So why we make it? The first reason - It's delicious. The second reason - it is made with local ingredients. The third reason - Elderflowers have quite a few health properties.
