One of our current specials is made with a black tea that comes from Indonesia, Java to be exact.
The tea is called Malabar Estate OP.
OP stands for Orange Pekoe and it is the name used in tea leaf grading. It denotes the highest grade of the specific tea. This grading system is used mainly for Western and South Asian teas, but not in China.
Java Orange Pekoe consists of long, dark leaves that brew a full-bodied, copper-red liquor that is low in tannins with an elegant, spicy aroma. It comes out even better tasting, when fermented into a Kombucha.
As always, we use only 4 ingredients to make this Kombucha. So, Java OP tea, filtered water, unrefined brown sugar, and our cultures.
When done, this Kombucha has a nice reddish-brown color.
Which shows even better in the bottles.
And even better, when the bottles are sun-kissed!
So, overall, it's nice nice, and full-bodied Kombucha, especially for those who like black tea brews.
