Pai Mu Tan & Rose Petal comes as a replacement for Ming Qian White.
As with many Chinese names, this one being no exception, the name is spelt in many similar forms. Here in Germany it's Pai Mu Tan, in English speaking countries it's spelt as Bai Mudan. The name means White Peony & as Teapedia (1*) describes it " is a type of white tea made from plucks each with one leaf shoot and two immediate young leaves"..." Bai Mudan is sometimes preferred by white tea drinkers for its fuller flavor and greater potency..."
The main production provinces for this tea are Fujian, Fuding and in Zhenghe - all located in China.

It is a wonderful white tea with quite a characteristic & unmistakable look:
As a matter of fact, we could have left is as is (meaning in a pure form as tea only), just like all of our Premium Line Kombucha - so just as Pai Mu Tan, but we had some wonderful, naturally scented rose petals, & this was the only tea, delicate enough, that we could use those with. So that's the reason for this combination.
The tea with rose petals ferments really nicely, giving a light & very pleasant Kombucha with both the rose hue & the delicate rose flavor

As with all of our Kombucha, the carbonation in Pai Mu Tan is all natural & this final product is left unfiltered to keep all the natural properties of fermentation, as well as those of the tea. When it's all bottled, our Pai Mu Tan goes through the second fermentation to encourage the formation of natural carbonation & the a bit of conditioning in the fridge.
Finally, it can be thoroughly enjoyed, sipped from a Champagne glass!
We have shortened the German name to Pai Mu Tan - Rosen (roses).
