Finally the time has come to write a few words about this excellent Kombucha that we have had for the last two months. Oriental Beauty Bärbucha Kombucha is made with a top shelf Oolong called Oriental Beauty Oolong (also sometimes also called Easter Beauty, or Dong Fang Mei Ren.
The tea, itself comes from Taiwan & it's an Oolong that belongs to a special category: Bai Ho. It means that it's a bug-bitten tea & to be more precise, it is a tea that when it is attacked by a specific leaf hopper predator, it releases specific compounds that produce honey and muscatel aromas in that tea.

Besides the very characteristic aroma, this tea has a very specific look, with color range from white hairy tips, through reddish parts to darker pieces.
It is an Oolong from a top shelf, with prices per kg being around 250-300 Euros & even higher.
But it is well worth the price. It makes an excellent tea.

Whenever we make new Oolong Kombucha, we are always amazed by the complexity of flavors that come out through fermentation.
We have enough tea to make another batch of this outstanding Kombucha & after the tea is gone, it'll be time to try another exciting Oolong. With this one, it'll be a 3 month run, which is not bad. One day we will definitely go back to it, but for right now, if you are interested & if you are in Berlin, you should definitely stop by to taste it. Especially that the time (& the supply) is running out.
