Darjeeling Bärbucha Kombucha

A single tea Kombucha & a new addition to our Classic Line is a bit different than the other four Kombucha in this lineup. This one is also cold brewed.
We have done some experimenting with cold brewing & in this particular case, we were amazed at the results. So many fruity notes came through, the notes that were hardly distinguishable in a hot cup of this tea.
The name of this Kombucha comes obviously from a famous tea from India. Darjeeling district, in West Bengal, to be more precise. Although the tea that is grown over there is processed to be a green tea, an Oolong, a white tea or a black tea. The latter is the most well known. Darjeeling can also be a cheap & not that exciting variety, but also something very special. Like some of the "first flush" or the mysterious sounding abbreviations like SFTGFOP (Super Fine Tippy Golden Flowery Orange Pekoe).
Ours is a very good Organic variety of the black tea & we are very happy with the fruity notes coming out of it in our Kombucha.
The cold steeping process takes a couple of days. As with all of our Kombucha, we use a really good quality water & hat water brings out the best out of this tea.
On the pic below you can see the tea right after it was put into water.
After only one day, it looks already dark & yummy.
Two days later, it's ever darker.

From this point it's the normal procedure with sugar, more water, Scoby & the starter liquid. Then it's a week long journey of initial fermentation & then it's ready.

And as always, the 2F to build up those lovely bubbles.
