Jun Chiyabari Bärbucha Kombucha

Jun Chiyabari is a Kombucha from our Premium Line selection.

It is made with an exceptional black tea, that comes from a tea estate in Nepal.

The estate name is Jun Chiyabari, and that is how the tea is called - Jun Chiyabari Black.

The tea garden was established as Organic in 2001 and it was officially certified in 2012.

The tea gardens are located at the altitudes between between 1650 and 2200 meters above sea level.(for more, see here)


They specialize in various high quality teas, but this particular black one has stolen our hearts (and taste buds), right from the very beginning.

And that's because the predominant flavor profiles of this tea (and of Kombucha) are chocolate and malt. So a malted chocolate. Consequently, that makes this Kombucha a dessert Kombucha, when it's freshly made

And who would not want a dessert Kombucha for a change?


So, here's how we make it.


Starting with a filtered and revitalized water at the right temperature, and this exceptional black tea.

Next, comes our unrefined brown sugar that we use in all of our Kombuchas.

And that's how this tea looks like after straining.

Here's the dark chocolaty broth with intoxicating aroma - aka our tea for Kombucha.

Next, comes the Scoby with the starter liquid. Then it's time for primary fermentation.

In the meantime, we have to get our bottles ready.

Next, comes the bottling day.

Have you noticed that beautiful chocolaty color of our Kombucha?


So when all the bottles are filled, closed and stamped with the production date, it's time for the so called second fermentation.

The purpose of the F2 is to naturally build up the CO2 inside the bottles.

And yes. the key word is naturally, as we do not force carbonate our Kombucha.


And when that process is over, then it's time to move our Kombucha into the fridge for further conditioning. That takes about a week, or so.

When that is all done, this delicious Kombucha is ready for the ultimate enjoyment.
