Pai Mu Tan Bärbucha Kombucha

Pai Mu Tan is a great tasting white tea, and that is why we have made room for it, in our Premium Line selection.

As it is the case with many Chinese names, there are many variations on how this name is written. Here in Germany, it's Pai Mu Tan, in English speaking countries it's written as Bai Mudan.

Pai Mu Tan means White Peony, and as Teapedia describes, it " is a type of white tea made from plucks each with one leaf shoot and two immediate young leaves"..."Bai Mudan is sometimes preferred by white tea drinkers for its fuller flavor and greater potency..."

The main production provinces for this tea are Fujian, Fuding, and in Zhenghe - all located in China.

It is a wonderful white tea, with delicate floral notes. Those become even more pronounced, once this tea gets fermented into Kombucha.

As always, we use glass containers for each and every single batch of our Kombucha.

Using those glass containers guarantees us the best tasting Kombucha.


Here's our ready-for-fermentation single batch of Pai Mu Tan.

Once the tea is fermented, we remove the Scoby, and we strain the liquid through a strainer to get rid of the yeast and Scoby pieces. Then it goes into our retail bottles.

As with all of our Kombucha, the carbonation in Pai Mu Tan is all natural, and this final product is left unfiltered to keep all the natural properties of fermentation, as well as those of the tea.


When it's all bottled, our Pai Mu Tan goes through the second fermentation process to encourage the formation of natural carbonation. Then, comes a bit of conditioning in the fridge.

And then, it's finally ready for retail!
