Pi Lo Chun or Bi Lo Chun (Bilochun). are just some of the names for Xia Sha Ren Xiang tea.
The literal translation of the name is "green snail spring", and it belongs to a famous green tea, originally grown in the Dongting mountain region, near Lake Tai in Suzhou, Jiangsu, China.
It is a tea that is plucked and processed in Spring. The quality of this tea can differ substantially, and it is usually available in 7 different grades.
We've been enjoying a higher grade Pi Lo Chun every year, in Spring, when a Taiwanese one becomes available. It is a Pi Lo Chun that comes from Sanxia, and it is absolutely delicious.
As a tea, it has some very pleasant fruity and nutty flavor, with some grassy vegetal notes.
For Kombucha, we use the tea that comes from Anhui, China. It is also a higher grade.
As a result, we get a Kombucha that is light and refreshing. And it also has a nice floral bouquet.
And when Kombucha is done.
We've been definitely enjoying it every time we make it. So, expect it back again every now and then.
